    Joe,

    I don't know. My husband and I are in the non-restorer category. We got the stove on Craigslist and the woman we bought it from said her mom alway light the twell. it is a 1946 model. i did by chance open the storage door when the twell was going and i was surprised that i could see the burners going. i'll have to check it out a little further.

    I did the same thing one day this week. Cooked them on the stove top. i cooked by directions and thought they were too chewy for me. i experimented this morning again. but the results were too gummy. last night i put them in my double boiler with boiling water, them heated them in the twell until the steam came out, then turned the twell off for the night. as i said i thought they were too gummy. so my next step is put them in the twell with boiling water and already have the water in the bottom of the double boiler boiling. and then leave the whole boiling thing in the twell overnight with no heat. i'll let you know.

    Ditto what Asfan said.

    Alton on Good Eats recommended for stove top to stir with the handle of a wooden spoon and NOT the spoon part. I was not paying attention to the reasoning behind that. Asfan, did you catch why???
    I use the T-well method.

    Haven't had a chance to try yet. Tomorrow's shopping day. Will pick up the steel cut oats, grock all of the info above and give it a try this weekend. Will report back.

    Well, I'm bringing this thread back to the original topic: Oatmeal. As everyone has read, I'm having difficulty with the steel cut oats in the twell. I decided to do them stove top and see the results. I did 4 cups water to 1 cup oats, cooked according to directions they taste great,but they have a little bite to the oat. I happen to like the texture.....is it suppose to be like that?
